Spring Weeknight Dinners
Busy week ahead? Don't let your mealtimes suffer! The team at Alexan Enclave Apartments in Westside Houston found these easy, springtime dinners!
1 – Roast Chicken with Spring Vegetables… this one-pan meal is the perfect option for a weeknight dinner! Let the chicken roast for 15 minutes while chopping potatoes, radishes and scallions. Then, add the veggies and put the pan in the oven for 20 more minutes – and you're done!
2 – Pasta Primavera… this 30 minute recipe requires 12 ounces fusilli, ½ pound sugar snap peas, 2 carrots, 1 yellow bell pepper, ¼ cup extra virgin olive oil, 4 cloves garlic, 1 pint cherry tomatoes, ¼ teaspoon red pepper flakes, ½ cup chopped mint, ½ cup grated parmesan cheese and 4 ounces goat cheese. 3 – Chicken Piccata Pasta… to create this dish you will need – 2 tablespoons extra-virgin olive oil, 1 1/3 pounds chicken breast tenders, 1 ½ tablespoons butter, 4 cloves garlic, 2 shallots, 2 tablespoons all-purpose flour, ½ cup white wine, 1 lemon, 1 cup chicken broth, 3 tablespoons capers, ½ cup flat-leafy parsley, 1 pound penne rigate pasta and chives for garnish. 4 – Potato-Egg Salad… for this dish, boil 1 pound halved new potatoes for 10 minutes. Add 4 eggs to the water,; remove from the heat, cover and let sit 10 minutes. Add 1 cup frozen peas; cover 1 minute. Drain; peel and quarter the eggs. Toss with 3 tablespoons olive oil, 2 teaspoons lemon juice, and parsley and mint. Sprinkle with parmesan and, voila!
