To get their authentic flavor, Las Brasas roasts their meats in a charcoal-fired oven that was built in Lima, Peru and imported to the United States. They use all-natural coal, and their chickens are marinated for at least 24 hours in a blend of signature spices. The chef at Las Brasas even attended Le Cordon Blue in Peru, a world-renowned cooking school.
The star of the menu at Las Brasas is, of course, the chicken. You can order 1/4 chicken, 1/2 chicken, or even a whole chicken for a family-style meal. All chicken meals come with your choice of sides, which include cilantro-infused rice, yucca, black beans, and fried plantains. The plantains are a very sweet, scrumptious choice. In addition to chicken, Las Brasas offers some other Peruvian dishes like Lomo Saltado, a tender steak dish served with onions and tomatoes. Finish your meal with an authentic dessert, like the Peruvian flan, a custard-like tart.
